Being a busy mum I’m always looking for recipes that I can just quickly throw in the oven and walk away but have the healthy side to it. my family and I probably have this meal twice a week and if you don’t like a vegetarian dinner you can always serve this as your side dish with a nice lean piece of meat I prefer lamb or a nice piece of pork with it.
What you will need
- One large sweet potato
- One egg plant
- One red onion
- One tomato
- One zucchini
- Half a can of chickpeas or can put in the hole can if you prefer more
- One block of feta
- 1/4 a cup of lemon juice
- 1/4 olive oil
- 1 tablespoon of dried Oregano or fresh cut into fine pieces
Re-heat your oven to 180°
Cut all vegetables into bite-size pieces and put it all in a baking dish and add chickpeas, Lemon juice, Oregano, Oil and onion.
Cook for 45 minutes or until ready. for the last five minutes add feta break it up and spread over the top.
